Amy Atlas Halloween Table

We hope all of our readers are safe and sound today.  As many of you know, we’re based in NYC. We’re very thankful that we made it through Hurricane Sandy, which hit our city and the northeast hard last night.  Thank you to all of you who have checked up on our team on Facebook and Twitter. We are all okay.

I was originally scheduled to do a national TV segment about Halloween treats this morning, but that was postponed because of the hurricane. While we are going to have a low-key Halloween because of the hurricane, we still thought we’d share the segment ideas for those of you who are celebrating.  This dessert table includes some easy recipes adapted from Sweet Designs, as well as some spooky and fun goody bags. On the table were Jack ‘O Lantern Macarons, Ghost Pound Cake Bites, Witch Pudding in votives, Pretzel Rod Fingers, Pumpkin Bark, and Broomsicle Drinks {scroll down for some of the recipes}.

Simple paper bags were cut and crafted to look like bats, ghosts, and Frankenstein. We thought we’d have time to photograph the how-to photos, but we’re limited on connection and power here in NYC today.  We’ll get it up after everything calms down here and then you can bookmark it for next year.

We also created some printables for you, like the Halloween spider treat box below. Recipes

Jack O Lantern Macarons
(Makes 12 Jack O Lanterns)

Ingredients:
12 store bought pumpkin or orange macarons
4 pieces of green licorice rope  or green Taffy
1 cup dark chocolate, melted

1.  Place macarons on a platter.
2.  Cut green licorice into I/2 inch pieces and tuck into the top part of macaron so that it looks like a pumpkin stem.
3.  Transfer melted chocolate into a piping bag.  Pipe chocolate to create triangular eyes, nose, and zig zag Jack O Lantern mouth.

Ghostly Pound Cake Bites
(Makes twelve  2-inch ghostly pound cake bites)

Ingredients:
Simple Glaze (recipe below) doubled
2 loaves store-bought pound cake
1 cup dark chocolate, melted
Ghost Cookie Cutter

1. Prepare a baking sheet with parchment and set a rack over it.  Set aside.

2. Using a serrated knife, trim the crust from the pound cakes on all sides.  Slice the pound cakes lengthwise so that there are four pieces of pound cake.

3. Using the ghost shaped cookie cutter to cut out pound cakes to create mini ghostly pound cake bites. Transfer to the rack.

4. Using a teaspoon, drizzle the glaze over each pound cake bite, then patch the exposed parts on the sides with more. Let set in a cool, dry place for at least 1 hour.

5. Transfer melted chocolate into a piping bag.  When the glaze is dry, pipe the chocolate on the ghosts to create eyes.

Simple Glaze for Ghostly Pound Cake Bites
Ingredients:
2 cups confectioners sugar, plus more to thicken if necessary
4 tablespoons water

Pass the confectioners’ sugar through a sieve into a medium bowl.  Add 4 tablespoons of water and stir until the icing is smooth and coats the back of a spoon. If the icing seems too thin, gradually pass a bit more of the sugar through a sieve into it and stir until smooth.  If it is too thick, add water by the drop and stir until smooth.

Witches Pudding
(Makes 4 witches)

 Ingredients:
1 Box Instant vanilla pudding mix
2 cups cold milk
4 sugar cones
4 Votive glasses, with narrow openings
Candy (like M&Ms or other candy)

1. In a bowl, beat vanilla instant pudding and 2 cups cold milk with whisk for approximately 2 minutes.
2. Pour into votive glasses so that the pudding is filled to the top of the glasses.  Set aside.  Pudding will be soft-set in 5 minutes.
3. Place sugar cone on top of votive for witch hat.
4. With glue gun, add M&M’s (or other candy) to the votive for the eyes.
