Sneak Peek – Making Chocolate with Jacques Torres

With Master Chocolatier Jacques Torres

Holidays are around the corner and I had the privilege of getting to make chocolate Christmas trees with the one and only Jacques Torres aka “Mr. Chocolate.” For the very few who may not know of Jacques Torres, he is a world renown pastry chef and chocolate aficionado.  No one turns chocolate into edible art masterpieces like Jacques Torres.  His list of accolades is very impressive.  He was the head pastry chef at Le Cirque for several years, has published cookbooks, has had his own tv shows, the list goes on.  You can check out his full bio here.  Jacques has a few chocolate shops in Manhattan and we visited his Hudson Street location for this festive holiday project.  I’ll be back with a vlog, but I thought I’d show you a sneak peek of us making chocolate in the shop.

Before I do that though, I have to say how incredibly gracious Mr. Torres and his staff are.  Holidays are a very busy time for them and they were busy as elves making chocolate Christmas trees, ornaments, snowman, gingerbread men, and lots of other festive chocolates {ps – for those observing Hanukkah tonight, they have chocolate dreidels). In the middle of the hustle and bustle of getting these chocolates made, they made us feel completely at home.  They threw hairnets and chefs coats on us and put us to work!   Jacques is also so dynamic, extremely hands on in his shop and with his staff, and very fun to be around.  There is a loving dynamic that he has with everyone that works for him and it is infectious. It was an honor and pleasure to see the chocolate connoisseur in action.

The tempering machine has to stay at about 32 -34 degrees celsius so the chocolate looks shiny.

Opalescent, hand painted chocolate ornaments that are being sold in Jacques’ stores now!  These are stunning.
